Birthday breakfast; Extra-Special Recipes for Breakfast in Bed
It’s September and the time of the year when our two co-founders are celebrating their birthdays, so we wanted to share their favorite recipes for a breakfast in bed. But whether you're celebrating a birthday, a holiday, a cozy Sunday or just want to show your special somebody you care, stack your tray with these sunny favourites for the ultimate breakfast in bed.
CLASSIC CRISPY WAFFLES
Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees (to keep cooked waffles warm). Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, butter and eggs in another bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it's okay if there are some lumps).
Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles. Serve with maple syrup, butter, sugar or fruit preserves.

BUTTER MILK PANCAKES
Basic Butter Pancakes is a 10-minute recipe that is all you need to get the perfect buttery pancakes! In small bowl mix flour, baking powder, sugar, salt. In separate bowl mix milk, egg, and butter. Combine contents of both bowls together. On a stovetop, heat and grease the pan with butter. Pour 1/4 cup pancake mixture to pan. Flip pancake after bubbles have formed (1-2 minutes)

OVERNIGHT OATS
Why have dutiful porridge, when you can have indulgent muesli? The rule of thumb is half a cup of rolled oats and a tablespoon of seeds to one cup of liquid (milk, Greek yoghurt or fruit juice). Put them in a bowl or glass jar and leave it all overnight, in the fridge. In the morning, you then add whatever toppings you desire. Our favourites are:

Banana flaked almond and chopped dark chocolate with a spoonful of crème fraiche.

A handful of fresh berries, chia and a shot of vanilla extract

Chopped apples, pecans and a large pinch of mixed spice

There are endless variations, depending on your taste and what's available in your store cupboard.
OVERNIGHT CINNAMON BUNS
